If you don’t like peanut butter then don’t read any further – these extremely quick, easy and clean eating qualifying (!) crispy bars are VERY peanut um….. buttery.
Ideal as a healthy snack, they are best kept in the fridge as they can go soft quite quickly. A drizzle of melted chocolate finishes them off nicely. And yes – the darker and higher cocoa percentage the better it is for you.

- 100g puffed gluten free brown rice
- 3 heaped spoonfulls of peanut butter
- 3 tbsp coconut oil

1.Mix all the ingredients together until the rice is well coated
2.Press in to a small tin and place in the fridge until set.

Sainsbury’s didn’t deliver my coconut oil with my shopping…..gutted!!! Can I substitute or do I need to pop to the shops tomorrow??
Oh boo to Sainsburys Stacy. That’s no good. You really do need the coconut oil as it helps it to set firm. I would say use some golden syrup and butter but that defeats the purpose of the healthiness! Sorry, think it may be a trip out xx
