Ok so let’s not pretend this is a bar of dairy milk. Or galaxy. Or one of those really lush truffle things you can buy at M&S….. but if you like coconut, and you still want your treat fix without the sugar overload then give this alternative a whirl.
You can enjoy it straight from the freezer, and as it is quite bitter (not to everyone’s taste I know but I personally like to dabble in dark chocolate now and again) it actually works really well with coffee.

- 1/3 cup frozen raspberries
- 1/3 cup shredded coconut or coconut flakes
- 1/3 cup coconut oil
- 80g salted butter
- 2 tbs raw cacao powder or cocoa
- 2-3 tbs rice malt or agave syrup

- Line a dinner plate or baking tray with baking paper
- Scatter the berries and coconut on the plate or tray
- Melt the oil and butter in a saucepan or in the microwave then stir in the cacao powder and syrup until combined.
- Pour over the berries and coconut and freeze for 30 minutes, until firm
- Break in to big shards and enjoy
