Ok so let’s not pretend this is a bar of dairy milk. Or galaxy. Or one of those really lush truffle things you can buy at M&S….. but if you like coconut, and you still want your treat fix without the sugar overload then give this alternative a whirl.

You can enjoy it straight from the freezer, and as it is quite bitter (not to everyone’s taste I know but I personally like to dabble in dark chocolate now and again) it actually works really well with coffee.

{Ingredients}

  • 1/3 cup frozen raspberries
  • 1/3 cup shredded coconut or coconut flakes
  • 1/3 cup coconut oil
  • 80g salted butter
  • 2 tbs raw cacao powder or cocoa
  • 2-3 tbs rice malt or agave syrup

{Method}

  1. Line a dinner plate or baking tray with baking paper
  2. Scatter the berries and coconut on the plate or tray
  3. Melt the oil and butter in a saucepan or in the microwave then stir in the cacao powder and syrup until combined.
  4. Pour over the berries and coconut and freeze for 30 minutes, until firm
  5. Break in to big shards and enjoy
