Now we don’t usually post food inspiration on a Wednesday however this chocolate truffle recipe is so flipping easy we had to share. We hope you’ll be inspired to pop to the shops after work to buy chocolate and then to get in the kitchen and whip up a batch this evening. You need just three ingredients, well four if you count the topping.

- 200g dark chocolate
- 200ml double cream
- Small amount of softened butter

{Method}
1. Break the chocolate in to a mixing bowl
2. Heat the cream gently in a saucepan and then pour over the broken chocolate
3. Stir until the chocolate is melted and well combined
4. Blend in the butter to make a ganache
5. Cool the mixture either at room temperature or in the fridge until the ganache has firmed up
6. Form in to small (or large!) truffles by either forming with two teaspoons or rolling in your hands (coating your hands in cocoa powder will stop it sticking)
7. Coat in anything from cocoa powder, melted chocolate or chopped nuts.
8. Store in a cool place

These little truffles taste so delicious I may have treated myself to one (or seven). If you make your own and there’s any left to share you could wrap up with tissue paper in a fancy box or stack in a cellophane bag for a sweet thank you gift. Our baker Charlotte suggests you can add flavouring such as orange zest or brandy but be careful not to add too much liquid. Alternatively cheat and use flavoured dark chocolate!

Hi Jenna. They should last for about 4 to 5 days (if you can keep them that long). Keep them in a cool place or you can keep them in the fridge if you prefer. If you coat them in chocolate may be best not to store them in fridge as they can get ‘bloom’ on them which is the white colour that sometimes appears on chocolate. Not the end of the world if you are going to gobble them all but looks less pretty if you are giving them as a gift! Enjoy x

Charlotte I like a boozy truffle so wondered how much is too much liquid?!
I would probably only add a teaspoon or 2 or otherwise substitute a bit of the cream for the alcohol. Obviously not all of it!! That should help balance out the liquid to chocolate ratio and keep the ganache nice and firm x
