Growing up, dinner (which we called tea in Yorkshire) would usually involve Findus Crispy Pancakes, spaghetti bolognaise, shepherd’s pie, macaroni cheese or chicken kiev, with Angel Delight (butterscotch flavour preferably) for dessert. Prawn cocktail was an occasional treat, reserved for birthdays and Christmas.
We still have prawn cocktail as a starter on Christmas day. It’s a family tradition and pretty much all I’m capable of assembling after a Christmas Eve spent in the pub. We stick to the classic combination of iceberg lettuce, tomatoes, cucumber and prawns, topped with some ready-made prawn cocktail sauce, but I’m very much liking the sound of this update on the retro classic, recipes and photographs by Borrowed Light. Perhaps I’ll suggest we try it this Christmas…

{Ingredients}
For the cocktail sauce
- 2 tbsp of mayonnaise
- 4 tbsp natural yoghurt
- 1½ tbsp tomato puree or ketchup
- 1 tbsp Worcester Sauce
- 2 tbsp lemon juice
- 1 garlic clove crushed
- Pinch of cayenne pepper
- Pinch of salt
For the salad
- Sliced avocado
- Sliced red apples (skin on)
- Iceberg lettuce shredded
- Lemon, cut into wedges
- Tiger prawns

Method
- Mix all the sauce ingredients together thoroughly with a wooden spoon until you have an even texture and colour (we used GB Sauces Proper Tomato Sauce – as well as being more tomato-y than regular ketchup it has a little added spice, giving the sauce some heat).
- Store in the fridge until ready to serve.
- To assemble the salad, line your plate or bowl with shredded lettuce.
- Add alternate slices of avocado and apple.
- Add the prawns.
- Top with a generous dollop of sauce.
- Garnish with a wedge of lemon and a sprinkle of paprika.

Oh my goodness, I LOVED Angel Delight (strawberry). Growing up in Northumberland and Scotland involved a lot of chicken kievs etc. And Marks and Spencer’s creme anglaise. Wonder if you can even find these things now?!?

Ooh we didn’t have chocolate sprinkles with our Angel Delight but we did have this chocolate flavoured stuff that you put on top of ice cream that went hard, I think it was called Ice Magic!
Ice Magic!! I remember that, when the ice cream ran out we would pour it on ice cubes, to go hard so we’d get our chocolate fix (sad, I know)

Charlotte, I literally cannot believe you’ve never had Angel Delight…this needs to be rectified! Although, I do wonder how nice it would be as an adult…
