Super Quick Peanut Butter Crispy Bars

If you don’t like peanut butter then don’t read any further – these extremely quick, easy and clean eating qualifying (!) crispy bars are VERY peanut um….. buttery.

Ideal as a healthy snack, they are best kept in the fridge as they can go soft quite quickly. A drizzle of melted chocolate finishes them off nicely. And yes – the darker and higher cocoa percentage the better it is for you.


{Ingredients}
  • 100g puffed gluten free brown rice
  • 3 heaped spoonfulls of peanut butter
  • 3 tbsp coconut oil

{Method}

1.Mix all the ingredients together until the rice is well coated

2.Press in to a small tin and place in the fridge until set.

  2. Sainsbury’s didn’t deliver my coconut oil with my shopping…..gutted!!! Can I substitute or do I need to pop to the shops tomorrow??

    1. Oh boo to Sainsburys Stacy. That’s no good. You really do need the coconut oil as it helps it to set firm. I would say use some golden syrup and butter but that defeats the purpose of the healthiness! Sorry, think it may be a trip out xx

  3. Look fantastic…im going to try with other nut butters.
    Although at first glance I thought the chocolate drizzle was lots of spiders sat on them…. I think that says a lot about me!
