Every healthy eating guru agrees that breakfast is the most important meal of the day, you’re literally breaking your fast after a night’s sleep and a nourishing breakfast will get your day off to the best possible start. My go to breakfast is porridge, topped with fruit, nuts and seeds but, when I’ve got the time, I like to have something involving eggs. Here’s five ideas inspired by some of my favourite places for out and about weekday breakfasts and weekend brunches.

Superfood scrambled eggs

Inspired by: Pod (my favourite chain for healthy and filling brekkies and lunches)
Slice of granary toast, scrambled eggs (made with two eggs) with spinach and fresh tomato stirred through towards the end of cooking, topped with crumbled feta cheese and seeds.

Poached eggs and smashed avocado

Inspired by: Hackney Bureau
Two slices of sourdough toast, two poached eggs, a side of smashed avocado topped with feta cheese, plus some leaves, I like watercress.

Turkish eggs

Inspired by: Counter Cafe
Fry half a red onion with a little paprika and cumin. Add a chopped garlic clove and fry for another couple of minutes. Add 150g of passata and gently simmer for around ten minutes. Make two hollows in the sauce and crack in two eggs. Cover with a lid and simmer for around five minutes for soft yolks. Serve with a couple of slices of toast and topped with fresh, chopped coriander and garlic yoghurt.

Miso scrambled eggs

Wholemeal muffin, scrambled eggs topped with chopped spring onions and miso sauce (which you can buy from Japanese supermarkets)

Veggie brekkie

Inspired by: Ozone
Poached eggs, oven roasted tomatoes, wilted spinach, mushrooms and halloumi. Incidentally, does anyone else find it amusing that halloumi is one of Waitrose’s essential items? I mean I love it as much as the next person, but I’m not sure it’s essential. My friend Die would probably disagree though.
