Yum yum, reminiscent of a sticky toffee pudding (my husbands favourite) but with no refined sugar and only natural sweetness from the honey and dates this is a reasonably “clean” option for afternoon tea (which would be green tea, obviously.)

{Ingredients}
  • 100g chopped dates
  • 200g butter, softened plus extra for greasing
  • 200g honey plus extra for drizzling
  • 3 eggs
  • 100g ground almonds
  • 125g wholemeal flour
  • 1 ½ tsp baking powder
  • 25g flaked almonds

{Method}
  1. Grease and line a 20cm cake tin with 6cm sides
  2. Preheat oven to 180 (gas mark 4)
  3. Place the dates in a saucepan and pour in 50ml water. Set over a high heat and cook for 2-3 minutes or until soft. Then remove from the heat and set aside.
  4. In a large bowl cream the butter and 200g of honey until soft.
  5. Whisk the eggs in a small bowl for a few seconds then gradually add to the creamed butter and honey.
  6. Stir in the cooked dates and any cooking liquid, followed by the ground almonds. Then add the flour and baking powder and fold in gently.
  7. Tip the mixture in to the tin smoothing the surface gently with a palette knife to smooth. Then scatter flaked almonds over the top.
  8. Place in the oven and bake for 45-50 minutes or until a skewer inserted into the centre of the cake comes out clean. It will be quite dark but the cake will still be moist inside.
  9. Remove from the oven and leave to cool in the tin for 10 minutes. Loosen the sides and remove from the tin.
  10. Use a skewer to pierce a few holes in the top of the cake and drizzle over some honey.
