We know you folks have requested some quick and easy lunch recipes (I also REALLY need some ideas for myself!) so we’ve got a few up our sleeves to share over the coming weeks. This particular salad ingredient combo made me raise my eyebrows when Charlotte from Buttercream and Dreams seemingly whipped it up in 2 minutes flat. Who knew I liked beetroot? Who knew you could get lentils in a tin?!!

Seriously it was so delicious, and would also work as an accompaniment to dinner/a smaller portion served with a chicken breast or fish. Do let us know if you give this a whirl and your thoughts (also, did you know you could get lentils in a tin?!)

{Ingredients}
  • 1/2 packet of feta cheese
  • 2 Beetroot
  • 1 tin of green lentils (or fresh if you prefer)
  • 1/2 Lemon

    {Method}
  • Chop the beetroot in to small chunks.
  • Cube the feta.
  • Drain the lentils and place in a bowl.
  • Add the feta and beetroot and squeeze over the lemon.
  • Mix together and serve!
